We have had a ton of readers ask through the years for recipes that have smaller numbers of servings. I don’t get to make them very often because I have a family of four with two growing kids, and we are family that eats leftovers. So, more servings just makes life easier since we are ok with eating leftovers. This week though, I had 4 boneless, skinless chicken thighs leftover in my pack after making another recipe and thought I would give this recipe idea a try. Now you have this awesome Melt In Your Mouth Crock Pot Chicken Dinner recipe!

Now, if you have a larger family or want to have leftovers, never fear. You can easily double this recipe and make it in a 6 quart crock pot. The cooking time will be really similar with the doubled ingredients and the larger crock pot.

What You Will Need for Melt In Your Mouth Crock Pot Chicken Dinner

Ingredients Needed

  • 2 medium size Russet potatoes, peeled and cubed
  • 1 cup baby carrots
  • 4 boneless, skinless chicken thighs (about 1.5 pounds)
  • 10.75 oz can cream of chicken soup
  • 1 cup water
  • garlic salt and parsley to taste

  • Prep Time: 10 to 15 minutes
  • Cooking Time: 4 to 6 hours on low or 2 to 4 hours on high

Instructions

  • Place your cubed potatoes in the bottom of your 4-quart crock pot.

  • Slice your baby carrots and add them to your crock pot.

  • Put your chicken on top of your veggies.

  • Mix together the rest of your ingredients and pour over everything.

  • Cover and cook on low for 4-6 hours or high for 2-3 hours. If possible, flip your chicken thighs over halfway through cooking.
